California

Dough | $10/$38

Ferrai Carano | $12/$45
Sonoma County | The grapes are destemmed, pressed, then cold settled in stainless steel tanks before moving to barrels for fermentation. Aged separately in French oak, the wine completes 92% malolactic fermentation, is then sur lie aged and stirred every two weeks until final blending in May, followed by bottling in June.

Flowers | $62
Sonoma Country |100% French Oak, 18% new, for 11 months. Aged for three months on lees in stainless steel tanks prior to bottling.

Frank Family | $17/$65
Carneros/Napa | Our Carneros Chardonnay is barrel fermented in 34% new, 33% once and 33% twice-filled French oak barrels for 9 months. While ageing on the lees, the wine was hand stirred regularly to promote depth and longevity.

Grgich Hills Estate | $85
Napa | Miljenko “Mike” Grgich has been called “The King of Chardonnay” since the winery began in 1977, and you can taste why in this classically-styled wine. We did not allow the Chardonnay to undergo malolactic fermentation, preserving its natural acidity. Exhibits extraordinary balance of citrus fruit on the front palate with minerality and depth of flavors on the mid-palate. The aftertaste is harmonious and lingers well beyond expectation.

Kosta Browne "One Sixteen" | $99
Russian River | The famous Chardonnay vineyards that we work with for this wine are from the coolest parts of the Russian River Valley. Here, fruit is allowed to mature gracefully on the vine, which we nd oers us more intensely focused avors and generous natural acidity. This vintage, we sought more freshness and focus through the use of concrete to age an increased percentage of the nished wine. We feel this allows certain vineyards to show more of their true character so that the nished wines preserve more of their charm. Every grape hits Hwy 116 to get here.

Rombauer | $75
Carneros | On the nose, beautiful aromas of ripe yellow peach, meyer lemon, and chamomile mingle together with hints of clove and vanilla. The peach, lemon, and vanilla spices continue onto the palate which is rich and concentrated, the flavors blending seamlessly supported by a creamy round mouthfeel. The lush back palate is lifted by both sweet fruit flavors and balanced acidity, ending with a lingering finish. The grapes were gently whole-cluster pressed while the fruit was still cool. The juice was pumped to tank to cold-settle overnight before it was racked to barrel for primary and malolactic fermentations. The lees were stirred every two weeks to give the wine rich flavors and a creamy texture

Twenty Acres | $8/$34
Clarksburg | Our Chardonnay is crafted to capture the essence of Clarksburg, with expressive aromas and flavors of fresh green apples and pears. The addition of Chenin Blanc, a variety we began growing in 1968, adds honeysuckle and floral aromatics, bright melon flavors, and crisp acidity. Oak aging and lees stirring impart hints of toasty vanilla and caramel notes, along with a rich texture. Our Chardonnay is fermented sur lie for 14 months in 54% new American oak and 28% in a combination of new and one-year-old French oak. Chenin Blanc is fermented in 100% stainless steel.

France | Chablis
Domaine William Fevre | $55
Chablis |William Fèvre is one of Chablis’ greatest wine domaines, developed by the eponymous William Fèvre between 1957 and his retirement in 1998 when he sold to the Champagne House Joseph Henriot. William Fèvre began with just 7 hectares and had soon increased this to 48ha, planting widely in the best of the 1ers and grands crus where the vineyards had fallen by the wayside. However the Fèvre penchant for new oak was not to everybody’s taste. Since the Henriot purchase the wines are made by the talented Didier Séguier who had previously been with the Bouchard team in Beaune. The domaine wines include 12 hectares of premier cru vineyards and no less than 16 hectares of grand crus. The whole crop of their domaine wines, straight Chablis included, is harvested by hand, the grands crus in small ‘cagettes’, with a sorting table back at the winery to ensure the quality of the raw material.
